Having played around a bit with Adium, I still prefer iChat (mostly because I can save transcripts to my sync'ed iDisk so there spotlight searchable on any Mac I use). But it bugs me that I can be invisible on AIM but not Google Talk, even though pretty much any other Jabber client supports invisibility on the latter. Have you looked into this?
